Zucchini and Penne Pasta

The zukes are in and after a long Sunday picking and doing the markets and farm stand, an easy dinner is all we want.  This simple dinner hits the spot!

3 to 4 cups zucchinis

3 to 5 garlic cloves or scapes, chopped

3/4 lb. mezze penne or penne pasta (cooked to package direction)

1 can of 28oz crushed tomatoes + 1/4 cup water

2 tbsp. oil

salt, crushed pepper, dried oregano, dried or fresh basil

1.  Boil water for the pasta.  While boiling, slice the zucchinis in strips the same size as the penne or you can diced them too.

2.  As soon as you put the pasta in boiling water, brown garlic in pan with heated oil.  Then add the zucchinis and toss.  Add crushed peppers if using.

3.  Add the crushed tomatoes and water.  Season with salt, oregano and basil.  Let simmer.

4.  Drain the pasta and add to the pan with zucchini.  Toss to coat.

Serve with grated cheese
